PORTUGUESE TOAST BREAD


This is one of my favorite breakfast when I go to Portugal. It’s very simple but fills you good for the morning. Just butter and toasts :D !
Recipe (makes a 25cm loaf) :
Ingredients :
600g flour
7g instant dried yeast
250ml lukewarm water
15g sugar
125ml lukewarm milk
30g butter (softened)
12g salt
How to :
Start by adding 60ml of the lukewarm water to a bowl with the yeast and sugar. Mix until the sugar is gone and then let it rest for 5 minutes and that it gets bubbly. Meanwhile prepare in a big mixing bowl the flour, salt and combine.
In another bowl bring together the rest of the water and the milk. In the bowl where the flour is make a well. Pour in the yeast mix give it a stir then add the water/milk and start to knead (You can either knead it with the paddle attachment of your kitchen mixer or by hand).
When you start to knead, slowly incorporate the butter until it goes into the dough. Knead for 8-10 minutes until you have a smooth and stretchy dough. Cover and let it rest in a warm area for 1h.
Grease your pan with some butter. When the dough proofed, bring it on a floured surface and shape into an oval that it will fit into your pan. Put it inside, cover it and let it rest for 40 minutes.
Preheat your oven to 180c. Bake in the center for 50-60 minutes or until golden brown. Take it out of the pan and let it rest on a wire rack for 30 minutes to 1h before slicing. Enjoy !
You can keep it in an airtight countainer up to 4 days. Also way that I love to eat it is, thick slices, toasted and buttered on both side. Perfect breakfast :P
